Ingredients
- 2 boneless skinless chicken breasts
- 2 cups green peas
- 1/2 cup mayonnaise
- 2 tbsp heavy cream
- 2 tbsp celery flakes
- 1/2 tsp poultry seasoning
- 8-10 cocktail crackers
- Salt and pepper
Directions
Make the dressing by mixing together cream, mayonnaise, celery flakes, and poultry seasoning, then cover and refrigerate. Sous-vide the chicken breasts to 140F for 2 hours, sear on grill, then cover and refrigerate for 1 hour. Dice chicken coarsely, then fold chicken and peas into dressing. Add salt and pepper to taste. Crumble crackers on top as garnish.
